The region where this coffee is produced is very remote and only since 3 years it is exported from here. This makes it very special for us to be able to offer the limited quantity. This coffee is processed in the traditional Colombian way. After harvesting, the berries are fermented briefly (12 hours) and then the coffee is washed. This processing and the good care by German Peña results in a delicious coffee with a powerful but smooth taste. With notes of honey, mango and citrus. Delicious for a filter and espresso.
Description
This coffee is produced at the farm of German Peña is found in Suaza, Huila, Colombia. It is located at an altitude of 1830 meters and therefore offers the perfect conditions for the production of quality coffee. The farm is about 4 hectares and different cultivars grow there, of which 40% Caturra. This coffee is fermented for 12 hours after harvest after which the beans are de-pulped and fermented for another 20-24 hours. After washing, the beans are dried for 20-30 days on raised beds.
The coffee is delivered to the cooperative as part of a "premium" program. Because of the good work that has been done we now have the result of a great cup of coffee. These results give German the interest to continue experimenting with fermentation. We can't wait for the next harvest.
